Snow Fungus Soup

Snow Fungus is a white jelly fungus Tremella fuciformis that is available dried in many Asian stores.

This dish was presented as part of the cooking demonstration at the September 2016 meeting. When I served this at the meeting my water to mushroom ration was off. There should have been more water in the finished soup.

 0.50 lb Snow fungus flower
 1 tbsp Sugar, Asian rock sugar for preference
 1 tbsp Goji berries also know as wolfberry
 5 dried red dates
 6 cups water

Soak the Snow fungus flower in water for at least 2 hours. Once it is soft trim away the hard base section and break it up into smaller pieces. I used a pair of scissors to do this.

Prssure cooker method

Add the water and Snow fungus and sugar to a pressure cooker and cook at high pressure for 20 minutes.

Do a quick release of the pressure on the pressure cooker by putting it under a tap and pouring water over the side. Add the Goji berries and red dates and simmer for 10 minutes then serve.

Stove stop method

Add the water and Snow fungus and sugar to a saucepan and simmer for about an hour.
