This is a simple Chinese influenced mixed mushroom stir fry. A good combination is about 6 oz of Shiitake mushrooms mixed with 10 oz of other mushrooms.

 1 lb Mixed fresh mushrooms, Shiitake, standard white mushrooms, Oyster mushrooms, Beech mushrooms or other wild species
 3 tbsp cooking oil
 3 garlic cloves, sliced
 1 cup vegetable, mushroom or chicken stock
 2 Spring onions, green part only

Clean and slice the mushrooms. Small ones like beech mushrooms can be kept whole. Discard any woody stems of the Shiitake mushrooms.

Heat a wok or frying pan until very hot and add the oil. Add the garlic and fry for 30 seconds.

Add the mushrooms and stir fry until they have released their moisture. If using wild mushrooms cook well, until they start to take some color.

Add the stock and bring to the boil. Cook until the mushrooms the stock is reduced and absorbed.

Add the spring onions and stir fry 10 ti 20 seconds then remove from heat.
